A true epicurean, Kareen honed her skills alongside chefs Michael Laiskonis and Patrice Demers. You may also have seen her on Ricardo's TV shows, where she helped develop recipes for many years.

A LOCAL BEVERAGE

At a time when promoting and supporting our local artisans is more important than ever, we challenged Kareen to come up with two exclusive recipes that would showcase Avril, the very first almond liqueur or amaretto made here in Quebec. The result is two extremely delicious and unexpected creations that you can make at home during the holiday season.

THE RECIPE

INGREDIENTS FOR 2 CUPS:

1/2 star anise
5 cardamom seeds
5 black peppercorns
3 allspice berries
1 clove
1 5 cm cinnamon stick
500 ml (2 cups) milk
60 ml (2 oz) Avril almond liqueur (can be omitted for a non-alcoholic version)
2 freshly brewed espressos from Mère Melade Café TOUCHÉ

PREPARATION STEPS:

1. Crush the spices in a mortar.

2. In a small saucepan, combine the spices and 375 ml (1 ½ cups) of milk. Bring to a boil. Let steep for 5 minutes. Strain through a sieve.

3. Using an emulsifier, froth the remaining milk.

4. In 2 warm coffee cups, add the Avril almond liqueur, pour in the spiced milk, the freshly brewed Mère melade espresso, and the remaining milk.
